Our founder Amanda created Barely Bread, in her own kitchen, when she was dissatisfied with the heavily-processed “traditional” breads, carb-heavy “bakery” breads, and the bad-tasting “health” breads currently on the market. Although she wasn’t trying to create grain-free bread (or even gluten-free bread) in that moment, she wanted a bread with CLEAN, honest ingredients that she could enjoy every day without the multitude of sins now associated with bread and other baked goods: the refined ingredients with very few nutrients, the starches known to cause blood sugar spikes, and the potential bloating and inflammation associated with gluten.

Months of experimenting with various nut and seed flours (all coincidentally without a speck of grain) eventually produced a bread that met her high standards of nutrition, held up to toasting and spreading, and most importantly, tasted good enough for her Italian, bread-loving husband! Any other whole wheat, sprouted-grain, gluten-free, or low-carb bread simply didn’t stack up from a taste, performance or nutrition standpoint.

After realizing that many people choose to reduce their grain intake, Amanda fully understood the importance of Barely Bread to the marketplace. It’s been a gratifying achievement to bring a “staple” like bread back to the table for those with celiac disease, gluten sensitivities, and diabetes; as well as those adhering to a grain-free, paleo, or low-carb diet; and those simply trying to follow a clean, minimally-processed, preservative-free lifestyle!

While we understand there is a place for whole grains in a healthy diet, we recognize that many people chose to limit or exclude grains for a variety of different reasons. All grains including those that are gluten-free, provide a concentrated source of carbohydrates, which can lead to blood sugar spikes and promote an insulin response. Our products are naturally high in fiber, low in carbohydrates and contain both protein and healthy fats, which help to slow digestion and provide a stable source of energy. All of our products are designed to keep you feeling satisfied and truly nourished.

Barely Bread is 100% GRAIN-FREE, inherently gluten-free, and great-tasting! We don’t use ANY of the high-carb alternative flours such as potato starch or rice flour that other typical gluten-free breads contain (which often cause spikes in blood sugar and can contribute to diabetes, heart disease, weight gain, and more).

Unlike grain-based bread (or simply gluten-free bread), our products are high in fiber, low in carbohydrates and contain both protein and healthy fats, which help to slow digestion and provide a stable source of energy. All of our products are designed to keep you feeling satisfied and truly nourished.

We are proud to say that our breads, bagels, baguettes, and rolls all taste and perform like traditional grain-based breads (after three years of meticulous R&D)! They are versatile enough to use as you would your typical loaf or slice – toasted with a thick layer of nut butter, smothered in avocado, piled high with turkey, layered in condiments, or whipped into a big batch of French toast.

Our combination of ingredients support a multitude of diets and lifestyles (whereas a strictly gluten-free bread, wheat bread, or sprouted grain-bread is much more limiting):

Grain-Free: Barely Bread contains a flour base of nuts and seeds – no wheat, rice, or grain of any kind.

Certified Gluten-Free: Contains no oats, yeast, or other hidden gluten; officially certified by the GFCO.

Rich in Protein & Fiber: Contains protein-rich eggs, high-protein almond flour and high-fiber flaxseed meal.

Low-Net-Carb Count: Contains naturally-low-carb ingredients: no potato, rice, corn, or tapioca starches; and no sugar alcohols to upset your digestive system.

Low-Glycemic / Diabetic-Friendly: Contains low-glycemic ingredients and no refined sugars.

Certified Paleo: Contains no grains, legumes, peanuts, dairy, soy, or processed sugar; officially certified by the Paleo Foundation.

Clean, Honest Ingredients: Contains no fillers, gums, stabilizers, artificial flavors, or preservatives – only ingredients you’d find in your own pantry (or your local grocer).

Gluten-free products may still contain grains such as quinoa, buckwheat, rice, corn, teff etc. Grain-free products contain no grains or pseudo grains of any kind. In addition to their difference in ingredients, many commonly consumed packaged gluten-free foods are actually higher in fat and carbohydrates and lower in protein, iron, and B vitamins. Therefore the true nutritional benefit of eating gluten-free packaged foods for those without celiac, may be minimal</p

Yes, all of our products (and our production facility) have been certified gluten-free by the Gluten Free Certification Organization (GFCO), an industry program of the Gluten Intolerance Group (GIG).

Although Barely Bread is not certified organic, we try to use organic ingredients when available, and we are committed to using all Non-GMO ingredients.</p

Yes, none of our products contain dairy.

No. Our current formulation uses egg (and honey, in some cases), so our products are not vegan.

Yes, Barely Bread products are low in carbohydrates and provide a good mix of fiber, fat and protein. All of these factors slow digestion, which helps to avoid a rapid rise in blood sugar levels and the triggering of an insulin response. All of our products contain fewer than 10 net carbs per serving (even our big, fluffy bagels), and little-to-no sugar!

Net carbs represent the grams of carbohydrates in a food minus its grams of fiber.

Our products contain eggs and tree nuts (i.e. almond, coconut, and in some cases, hazelnut). We have NO peanuts, NO soy, NO corn, and NO dairy.</p

Our high quality ingredients and small batch baking process do make our products more expensive, but we think it is worth it for a loaf that is 100% grain-free and free of fillers and preservatives. We are certified gluten free, certified paleo and do not use any GMOs. Our products are chock full of nutrition: naturally higher in fiber and protein and lower in carbohydrates and sugar than traditional grain-based breads or gluten-free alternatives.

Barely Bread is working to improve our e-commerce business. For the time-being, that means using a trusted e-commerce partner, such as ShopGourmet. They currently carry our loaves and bagels in cases of 6.
